2 fillets of tilapia (about 1 pound)
1 cup mayo
1 Tbsp Dijon mustard
1 tsp Old Bay spice
¾ cup panko bread crumbs
1 Tbsp olive oil
Salt and pepper to taste
Preheat oven to 400 degrees. Cook tilapia 10-12 minutes or until thoroughly cooked. Allow to cool, and flake the fish apart.
In a medium bowl, mix together the mayo, eggs, mustard and Old Bay. Fold in the fish and panko. Form into 8 cakes and allow to chill for about 25 minutes.
Heat oil in a large skillet over medium-high heat. Cook the cakes about 4 minutes per side, or until golden brown. Serve immediately. Enjoy!!
