1 lb fettuccine
1⁄2 cup olive oil
1 lb shrimp (uncooked, peeled and deveined)
4 large tomatoes, chopped coarsely
1⁄2 cup chopped fresh basil
3 large garlic cloves, minced
salt and pepper, to taste
grated parmesan cheese
Cook the fettuccine according to the package directions. Drain and keep warm, put aside.
Heat the oil in a large skillet over medium-high heat. Add the shrimp, tomatoes, basil, and garlic. Season with salt and pepper. Cook about 3 minutes, until the shrimp turn pink, stirring frequently.
Place pasta in serving bowl. Pour sauce over pasta and toss. Top with parmesan cheese and serve immediately. Enjoy!!
