Vegetable oil spray
2 cups all purpose flour
5 tbsp sugar, (divided into 1 tbsp and 4 tbsp)
1 ½ tspn baking powder
1 tspn salt
¾ tspn baking soda
3 tbsp butter, from freezer and cut into cubes
1 cup buttermilk
¾ cup raisins
Preheat oven to 375°F. Spray the non-stick spray onto an 8-inch-diameter cake pan. Whisk flour, 4 tablespoons sugar, baking powder, salt, and baking soda in large bowl until well blended. Add butter. Using fingertips, rub in until coarse meal forms. Make a well in the center of the flour mixture. Add buttermilk. Gradually stir dry ingredients into milk to blend, then mix in raisins.
Using floured hands, shape dough into ball. Transfer to prepared pan and flatten slightly (dough won’t come all the way to edges of pan). Sprinkle dough with remaining 1 tbsp sugar.
Bake bread about 40 minutes until brown and the tester inserted into center comes out clean. Allow the bread to cool in pan about 10 minutes. Transfer to a rack. Serve warm. Enjoy!!!
