Recipe – Cinco De Mayo Nachos Supreme

1 tbsp extra-virgin olive oil

1 lg chopped onion

1 lb. ground beef

2 cloves of garlic, minced

1 tbsp. Taco Seasoning

kosher salt, optional

1 15-oz. can of refried beans

¼  c. water

1 large bag of tortilla chips

2 c. shredded Cheddar cheese

2 c. Shredded Monterey Jack cheese

½  c. pickled jalapeños


1 avocado, sliced

1 large tomato, diced

¼  c. thinly sliced scallions

Sour cream

Hot sauce


Preheat the oven to 425º.  Line a large baking sheet with aluminum foil, and set aside. In a large skillet,  heat the oil over medium heat. Add the onion and cook until it’s soft, about 5 minutes.  Add ground beef and cook until it’s browned, about 6 minutes more. Drain the fat.  Add garlic and taco seasoning and season with salt, if desired. Cook until the meat is well browned and slightly crispy, about 5 minutes more. Add the refried beans and water to skillet and stir until well combined. Set the mixture aside.

Put half of the tortilla chips onto the baking sheet and top with half of the beef-bean mixture, half of the cheese, half of the black beans, and half of the pickled jalapeños. Repeat one more layer.

Bake until cheese is melty, 15 minutes.

Scatter the top with tomato, avocado, and green onions. Drizzle the sour cream and hot sauce and Enjoy!  Happy Cinco DeMayo!
